The Best Paleo Brownies I've Ever Baked!
A few months ago, I had an obsession with scones. After one too many scones in my system, I got over that phase but now I'm obsessed with something else. Brownies have always been on my list of impossible-to-resist treats and I've been working on a Paleo version of my brownies for some time.
Chocolate + Cake = Brownies
I guess I don't have to tell you that I'm also a certified chocoholic ( according to my mother ). I love chocolate in all its forms - chocolate truffles, chocolate cake and hot chocolate, which is oh so comforting and satisfying on a cold winter day. I'm also crazy about cakes so it only makes sense that it's virtually impossible for me to resist a really good brownie. A brownie to me is simply combining two of my favorite foods into one nice package.
After numerous tweaks, I am proud to say that I finally have a recipe that I'm not afraid to share. The last two batches almost killed me. The first batch? Dry as cardboard. The second batch? Not fit for human consumption period!
As you can see, the baking time ranges between 20-30 minutes because tastes differ. Most of my friends like the brownies to be more like cake so I cooked it longer for them. As for me, I prefer my brownies soft and a little gooey so the shorter baking time works for my tastes. I leave that up to you to decide. Whichever way you go, these brownies are definitely worth a try.

Ingredients
- 1/4 cup almond flour
- 3/4 cup granulated erythritol
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 egg whites
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
Instructions
- Prehead oven to 350F.
- In a bowl, stir together almond flour, erythritol, cocoa powder, baking soda and salt.
- Add egg whites, applesauce and vanilla extract and mix until well combined.
- Pour the batter into a greased 8x8 pan.
- Bake for 20-30 minutes, or until a toothpick comes out clean.
