Sweetheart Pancakes with Strawberry Preserves
Pancakes with a lot of love.
There's nothing better than waking up to a home-made breakfast. The aroma of freshly-brewed coffee and baked breads are heaven to the senses. Although breakfast can be anything from an omelette to a bowl of granola, nothing makes me happier than a plate of warm pancakes.
For most modern families, pancakes are reserved for lazy weekends. Special occasions such as Valentine's Day or an anniversary calls for something with a little more love. It only takes a little effort to make breakfast special, such as these fluffy pancakes with heart-shaped strawberry preserves.
The heart shape is easy to make. I used a heart-shaped cookie cutter, but you can use anything heart-shaped you have like a home-made paper stencil. High-quality strawberry preserves with a nice red color looks best, although any red-colored preserve or jam would do. Maple syrup is optional as the combination of preserves and powdered sugar is sweet enough for most people.

Ingredients
- 1 1/2 cups flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- Strawberry preserves
- Powdered sugar
- Fresh berries such as strawberries and blueberries.
Instructions
- Sift the flour, baking powder, salt and sugar into a large bowl.
- Make a well in the center of the mixture.
- Add milk, egg and melted butter into the well and mix until smooth.
- Heat griddle or frying pan over medium heat.
- Pour 1/4 cup batter onto the griddle or pan.
- Cook for 2-3 minutes or until bubbles form on the top and edges are slightly dry.
- Flip and cook the other side for 1 more minute.
- Sprinkle the top of the pancakes with powdered sugar.
- Place a heart-shaped cookie cutter on the top of the pancake.
- Add strawberry preserves inside the cookie cutter. Lift the cookie cutter off.
- Serve with fresh berries.
