Yummy Orange Shortbread Coookies
The first time I had a taste of shortbread cookies was on a Northwest Airlines flight a very long time ago. I can still remember the buttery taste and light texture of the cookie and I've been a fan of shortbread cookies ever since. Northwest Airlines no longer exists, but the desire for more of those cookies remain and there are times in my life that nothing else matters except getting my hands on some good old fashioned shortbread cookies.
I've been making them for many years and although I like them plain and unadorned, I sometimes like to play around a bit just for variety. Half of the time my experiments don't turn out the way I imagined. For example, I tried using a combination of kiwi and avocado puree ( don't ask! ) just because I had these lying around. I really don't know what I was thinking! Those went right into the trash bin.
Today I'll share with you one of the more successful ones. With shortbread I find that keeping things simple is usually better and this recipe delivers in terms of simplicity and taste. The only special ingredients I've added to this shortbread cookie recipe are orange zest and orange juice. I don't even use a cookie cutter of any kind, although you could if you wanted to. I just roll them into balls and flatten them into uniform shapes. I hope you enjoy these cookies as much as I love them.

Ingredients
- 1/2 cup sugar
- 2 tablespoons grated orange zest
- 2 cups flour
- 1 cup unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 tablespoons orange juice
Instructions
- In a large bowl, beat the butter, sugar, orange juice and orange zest until smooth.
- Add flour, salt and baking soda. Mix with your hands until well blended.
- Prehead the oven to 350F.
- Form the dough into walnut-sized balls. Flatten and arrange onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Transfer to a wire rack to cool.
- Eat it all or store in an airtight container.
