Not-So-Scary Spider Cupcakes

Not-So-Scary Halloween Spider Cupcakes

Halloween's always been a simple affair here in Japan and it's true even at my home. Still, I like to celebrate this fun holiday as it gives me an excuse to make something devilishly sweet. Most of the time, I stick to simple things like cookies or a seasonal pie. A few years back, I had baked an entire cake just for the occasion.

This year, I decided to get a bit more creative but in a fun sort of way. I usually gravitate towards the sophisticated especially since I don't have any kids. Still I thought it would be fun to mix it up a bit and besides, what's so wrong with entertaining the inner child in all of us?

I also kept things easy by using a boxed cake mix and a couple of store-bought ingredients. The frosting is made from scratch but they can be made in no time. They also taste better and not as tooth-achingly sweet as ready-made frosting. Trust me.

Helpful Tips

  • Completely cool cupcakes before frosting
  • Use homemade frosting for better taste
  • Let your kids help you decorate the cupcakes

That's really all there is to it. Even if you don't celebrate Halloween, these are still amazingly fun to make and eat!

Although I usually bake my cakes from scratch, I resort to Betty Crocker when I'm short on time and energy. There is absolutely no measuring or sifting of ingredients ( well maybe eggs and oil ), and they always end up moist and yummy. Bettery Crocker Cake Mixes come in an array of flavors and they are all really good.

I love my silicone muffin pans and use them all the time. They are always non-stick and so easy to clean. They also don't rust like metal ones do. I don't know what I'd do without my muffin pan.

Instructions

  1. Bake 24 regular-sized cupcakes according to cake mix directions. Set aside and cool completely.
  2. In a big bowl, mix together the confectioners's sugar and butter with an hand or standing mixer.
  3. Mix on low until well blended. Increase to medium speed and beat 3 more minutes.
  4. Add vanilla extract and milk, beat for another minute adding more milk if necessary.
  5. Reserve 1/4 frosting and set aside.
  6. Add food coloring to 3/4 frosting and blend well.
  7. Pipe or spread the orange frosting onto cupcakes.
  8. Top each cupcake with an oreo cookie.
  9. Use the reserved white frosting to pipe on the eyes.
