Not-So-Scary Spider Cupcakes
Halloween's always been a simple affair here in Japan and it's true even at my home. Still, I like to celebrate this fun holiday as it gives me an excuse to make something devilishly sweet. Most of the time, I stick to simple things like cookies or a seasonal pie. A few years back, I had baked an entire cake just for the occasion.
This year, I decided to get a bit more creative but in a fun sort of way. I usually gravitate towards the sophisticated especially since I don't have any kids. Still I thought it would be fun to mix it up a bit and besides, what's so wrong with entertaining the inner child in all of us?
I also kept things easy by using a boxed cake mix and a couple of store-bought ingredients. The frosting is made from scratch but they can be made in no time. They also taste better and not as tooth-achingly sweet as ready-made frosting. Trust me.

Serves: 24 regular-sized cupcakes
First You'll Get Some Cake Mix
Ingredients
- 1 box chocolate cupcake mix
- 3 cups confectioners's sugar
- 1 cup butter
- 1 teaspoon vanilla extract
- 1 -2 tablespoons milk
- 1 -2 tablespoons orange food coloring
- 24 oreo cookies
- 48 pieces mini chocolate chips
- 1 small bag black licorice laces

Instructions
- Bake 24 regular-sized cupcakes according to cake mix directions. Set aside and cool completely.
- In a big bowl, mix together the confectioners's sugar and butter with an hand or standing mixer.
- Mix on low until well blended. Increase to medium speed and beat 3 more minutes.
- Add vanilla extract and milk, beat for another minute adding more milk if necessary.
- Reserve 1/4 frosting and set aside.
- Add food coloring to 3/4 frosting and blend well.
- Pipe or spread the orange frosting onto cupcakes.
- Top each cupcake with an oreo cookie.
- Use the reserved white frosting to pipe on the eyes.
- Add eye pupils with the mini chocolate chips.
- Cut licorice laces into 2-inch lengths.
- Insert licorice laces to on either side of the oreo cookies to create spider legs.
- Your spider cupcakes are complete.
