Azuki and Green Tea Ice Cream Sandwich Cake
For the past year, I've been on a green tea kick and ever since, I feel as though my health has improved dramatically. I don't know if it's because I've stopped drinking sodas all together, I feel so much better. I feel like I have a lot more energy than I used to and I my stomach doesn't get bloated like it used to. I've also been turning to beans and lentils for my protein intake as I'm trying to steer away from eating too much meat.
On a recent visit to the supermarket, I was fortunate to find that ice cream was on sale for 25% off. It was the last day of the sale and decided that this is was perfect excuse to buy some. I ended up buying six ice cream sandwiches and I had planned to save them for a rainy day. Once I got home, I had a sudden desire for some azuki (Japanese red beans). I had a small bag of it in my cupboard and although I wanted to just open it and eat it right then and there with my fingers, I made a civilized decision to make something with it. After a few minutes of quick brainstorming, I decided to make something that was only in my head.
In this recipe, I've used green tea and azuki beans. For the cake, I turned to ice cream sandwiches that can easily be purchased from your local supermarket. Not only is this frozen treat delicious and easy to make, it comes with a host of health benefits.

This recipe only uses 5 ingredients with optional ingredients for decorating the top of the cake. Make sure you are using a good-quality green tea powder with a strong flavor for the best taste. You can mash the azuki beans yourself, but I prefer to buy them in a smooth paste for easier handling.
Ingredients
- 4 ice cream sandwiches
- 1/2 package vanilla flavored instant pudding mix
- 1/2 cup milk
- 2/3 cup smooth azuki paste sweetened
- 3 tablespoons powdered green tea
- Optional decoration for the cake
Instructions
- 1. In a large bowl, mix the milk and instant pudding mix and mix until thoroughly combined.
- 2. Add azuki paste into the bowl and mix well.
- 3. On a sheet of aluminum foil, place two of the ice cream sandwiches together side by side.
- 4. Spread 1/4 the azuki-pudding mixture on top of the sandwiches.
- 5. Place the remaining ice cream sandwiches right on top of the pudding layer you just spread on.
- 6. Cover the entire cake with the remaining azuki-pudding mixture.
- 7. Sprinkle with green tea powder and decorate the cake.
- 8. Freeze for at least two hours before slicing.
- 9. Serve with a sprinkling of powdered green to boost taste and health benefits.
